Emily Madeline Chocolates is the creation of Chef Emily Thompson. Chef Emily started her studies at Johnson & Wales University in Rhode Island and École Nationale Supérieure de Pâtisserie in France. After graduating, she began working at the Relais & Châteaux property Castle Hill Inn in Newport, Rhode Island. Starting as a summer intern she worked her way up to Pastry Chef. She loved her time there where she was able to cook at the world-renowned James Beard House.
In 2019, she was offered a position on the pastry team at The French Laundry. Where her love for chocolate flourished. The 3 Michelin star restaurant was exactly what she was looking for to hone her talents and creativity. Inspired, in 2022 Chef Emily left The French Laundry to pursue her passions and open her own chocolate and confections business in the Denver area.
